THE PROCESS OF FORTIFICATION
Rice fortification involves a two-step procedure. Initially, Fortified Rice Kernels (FRK) are produced. This can be accomplished, Extrusion and Coating, each offering stability under varying storage, preparation, and cooking conditions.
Hot Extrusion
Preferred in many countries, including India, due to its strong evidence base and high consumer acceptability.
Blending
The fortified rice kernels are mixed with regular, non-fortified rice in a 1:100 ratio, resulting in fortified rice. This maintains the same appearance, cooking properties, and taste as non-fortified rice.
Cooking
Add FRKs in the recommended ratio and cook rice as usual.
